PALEO NANAIMO BARS

My brother makes Nanaimo  Bars often, and they were my favorite. This time when he was going to make them,  I had to find a way that I could enjoy these again, with everyone else!  Side be side you could not tell the difference between mine and his! These are so so much healthier and just as good, if not better! They are so rich and creamy! I can't get my fill! They are my new favorite dessert!   Paleo Nanaimo Bars Makes 16 squares Ingredients    Crust   1 cup walnuts 1 cup unsweetened shredded coconut 8 medium size Medjool dates 1/2 cup cocoa powder 1/8 tsp. salt  coconut milk, as needed Middle layer 1 cup Cashews, soaked* ½ cup melted coconut oil ¼ cup maple syrup  ¼ cup coconut milk 1/8 tsp. salt Chocolate Layer 1/2 cup cocoa powder ⅓ cup maple syrup  1/3 cup melted coconut oil 1/8 tsp salt Instructions Grease a 8 by 8 inch pan with coconut oil, and set aside. Creamy Paleo Lemon Bars

I love these lemon bars! They are so creamy and rich. I love these sour, you can adjust them to your preference. Enjoy! Makes 16 squares Ingredients  Crust: 2/3 cups dates, pitted 1 cup walnuts  1/2 cup unsweetened coconut 1-2 Tablespoons Lemon Zest   Pinch of salt Cream filling: 2 cups unsweetened coconut  1-2 Tablespoons liquid sweetener of your choice (I used Maple syrup)     1/2-3/4 cups fresh lemon juice (from 2-3 lemons) 2 Tablespoons coconut oil 1/4 teaspoon ground turmeric (this is optional, it is just for the color) Pinch of salt 2-3 Tablespoons coconut milk as needed     Instructions In a  food processor , blend the dates, nuts, coconut, lemon zest and salt until they are all combined In an  8 by 8 inch pan greased  with coconut oil , press the crust into a even layer. In a high powered  food processor or blender add all the ingredients for the cream filling. Mix until creamy, adding coconut milk as needed. You can adjust the sweetene
