My Story

Hi!  Welcome to my blog! 

I started this blog because I love to bake and cook! I have been baking ever since I can remember. I was a cake decorator, and made my first wedding cake at 12, and a second one at age 13.


 At 16 I found out I had multiple food allergies and and extreme sensitivities. I am allergic to potato, fish, and hazelnuts. And am very sensitive to gluten, dairy, corn, sugar, soy and all grains.

Even with all of those I have figured out how to match what my family eats. Because of my passion for making food, I could not put baking and cooking aside because of diet changes. I have done a lot of research on how to use different flours and ingredients to make things I grew up eating.

Another reason I started this blog is because I hope to encourage people who are having reactions to food, that although it is not easy, it is well worth it to change your diet to feel better. Food is still amazing even though it does not contain gluten! 

Although most of my recipes are Paleo, I am not . It is a diet close to what I eat because of food allergies and sensitivities, but I don't follow the guidelines for a Paleo diet. So that is why you will see a few recipes that are not paleo friendly. :)

I have always enjoyed making roll-out sugar cookies. I created this recipe for a valentine's day treat. These have such a similar texture and taste, to the ones that I used to make. Paleo & Vegan Avocado Key Lime Pie

I love this light simple key lime pie! It is so creamy and smooth and tastes so fresh, and doesn't make you feel heavy after eating it. You may worry that it will taste like avocados... I can honestly tell you that it does not.  When you put avocados with something, like lime juice, all you can taste is the lime. But you get the creamy and smooth texture of the avocado that makes it so good!      Paleo & Vegan Avocado Key Lime Pie Ingredients  Crust Layer   1/2 C. Almonds(any other nut will work)  1/2 C. How to Soak Cashews 3 different ways!

I have three ways that I have soaked cashews. They all have the same results. When I have the time, or I remember, I use the overnight method. But when you forget...it is nice to have other options! I found that raw or steam pasteurized cashews are the best for soaking. However any type of cashews will work. I have used roasted before, they just take a little longer to soak. So keep that in mind depending on what is available to you.     Soaking Cashews   Ingredients:   cashews Water to cover Option 1) OVER NIGHT Place cashews in a glass jar or container and cover with water. Let soak in water for about 10-12 hours. They are fully soaked when they fall apart when you lightly squeeze them.   Option 2) 3 HOURS Place cashews in a  glass jar or container  and cover with hot water.
