Grain & Dairy Free - Paleo Strawberry Frosting


I have been wanting to try create a strawberry frosting recipe for a while now. I had an idea that I thought would work. So I tried it and it came out perfectly! I used this frosting on my Strawberry Cupcakes, it was the perfect strawberry frosting to go with a moist strawberry cupcake!

Grain & Dairy Free - Paleo Strawberry Frosting 
Ingredients
(Boil) 
2/3 C. Strawberries pureed
(About 1/3 lb of strawberries) 
2 Tbsp. Arrowroot starch
3 Tbsp. Lemon juice(about 1/2 of a lemon)
1/3 C. maple syrup 

(Add later)
2/3 C. palm Shortening 
2-3 Tbsp. arrowroot starch 
1 Tbsp. Coconut flour 
pinch of salt

Instructions 
In a medium size pot add the pureed strawberies, 2 TBsp of Arrowroot starch, lemon juice and maple syrup. Bring to a boil over medium high heat stirring CONSTANTLY. Boil for about 8 minutes, it should be thick and "jelly" like. Transfer to a container and place in the freezer until completely cooled. 

Melt the palm shortening and allow to cool completely, you don't want it to go completely solid again, just cooled down. Then add 2 Tbsp. of arrowroot starch, coconut flour and salt.
Once the strawberry mix in cooled, add it into the palm shortening mix and whisk. Place in the freezer and every 5 minutes give it a good whisk until it is thick. You might need 1 more Tablespoon of arrowroot starch if needed. It is ready to use at this point. If you want to use later refrigerate and bring to room temp to use.

*When I made the strawberry cupcakes along with the frosting I blended 1 Lb of frozen strawberries to make enough for both. If you want to make just the frosting, blend about 1/3 Lb of strawberries to make 2/3 C. of strawberry puree.

Grain Free & Paleo Banana Waffles

I Love waffles, especially  these banana waffles. They taste so good with the banana in the batter. It gives it the crunchy outside, with the soft inside!
