Grain Free & Paleo Strawberry Cupcakes


I wanted to make strawberry cupcakes, so I got to work and created this recipe. The cupcakes are so moist and Yummy!  


These are the best strawberry cupcakes I have ever tried. I had an idea for strawberry frosting that I have been wanting the try for a while now.  I tried it and the frosting turned out so good! It makes these cupcakes so good! To go to my strawberry frosting recipe click here. 

Grain Free & Paleo Strawberry Cupcakes

Ingredients 
1 1/2 C. Almond Flour 
1/3 c. Coconut Flour 
1 tsp. Baking Soda 
1/2 tsp. Salt 
3 eggs 
2 Tbsp. Coconut oil
1 C. Strawberry puree*
1/4 C. Maple syrup 
3 Tbsp. Lemon Juice(about 1/2 of a lemon)


Instructions
*If you are making the strawberry frosting along with this recipe blend about 1 pound of strawberries(I used frozen)until smooth. Take out 1 cup for the cupcakes and use the rest for the frosting.
  
Preheat oven to 350' F and line a dozen muffin tin with liners.
Mix the almond flour, coconut flour, baking soda and salt in a large bowl. Add the eggs, coconut oil, and strawberry puree and mix until just combined. Add the lemon juice and stir. 
Divide batter into muffin tin evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely before frosting.  


These are the cutest cupcakes I have ever made!I love how the pictures turned out, that pink is my favorite!

Grain & Dairy free Peanut Butter Bars

These are dairy, gluten, grain, and refined sugar free! Enjoy!  These are the real deal! I love chocolate and peanut butter, so these are  a must have for me! They are so similar to peanut butter cups you buy at the store! These are my go-to treats, they are so fast and easy to make. I will just whip a batch up whenever I want a treat! They are a great on the go dessert, just press the layers in a plastic container and stick the lid on, let set in the freezer, and bring where you need to go!    I like these best at room temperature, they are creamier and richer.
