Paleo and Grain Free Buns or Rolls


I have been making these buns for a long time. They are the best bread substitute around for those with a limited diet. They definitely satisfy my bread wants. I also make hot dog buns with this recipe! They are my favorite!


These buns are moist and the texture is right on!

I have been perfecting this recipe for a year now, so I hope you enjoy it!

Feel free to make any shape or size bun you need! 



Paleo Buns 
Makes 5-8 buns, or 4-6 hot dog buns. 
This depends on the size of your bun.

Ingredients 
1½ Cups Almond Flour
½ Cups Arrowroot starch
2 Tablespoons coconut flour
½ teaspoon Sea Salt
1 teaspoon Baking Soda
1 Tablespoon coconut oil, melted 
2 teaspoons Apple Cider Vinegar
3 Eggs
(optional 1 minced clove of Garlic)
(optional 2 tsp. sweetener of choice)

Instructions 
Preheat the oven to 350 degrees F. Grease a cookie sheet or glass pan with coconut oil and set aside.
In a medium size bowl mix the almond flour, arrowroot starch, coconut flour, salt, baking soda, until fully mixed.
Add the the eggs, apple cider vinegar and melted coconut oil, (you would add the garlic and/or sweetener of choice here.) Stir until fully incorporated. Dough will be wet, that is how it is supposed to be. Let it sit for a few minutes, that will allow the coconut flour to soak in the extra liquid. 

Scoop dough on to prepared pan, in the desired shape/size, these will rise a little on the oven so space accordingly. Once you have scooped all the dough on to the pan, wet your fingers a little and pat the dough balls. This makes the buns have a smooth, more "bread like" look and texture. 

Place in preheated oven for 20 -25 minuets, more or less according to the size. Or just until they just start to get golden brown around the edges. If you squeeze them they should be solid. Do Not Over Bake! These can get really dry if you over bake them, and it changes the taste/color.

How to Soak Cashews 3 different ways!

I have three ways that I have soaked cashews. They all have the same results. When I have the time, or I remember, I use the overnight method. But when you forget...it is nice to have other options! I found that raw or steam pasteurized cashews are the best for soaking. However any type of cashews will work. I have used roasted before, they just take a little longer to soak.
