How to Soak Cashews 3 different ways!

I have three ways that I have soaked cashews. They all have the same results. When I have the time, or I remember, I use the overnight method. But when you forget...it is nice to have other options!

I found that raw or steam pasteurized cashews are the best for soaking. However any type of cashews will work. I have used roasted before, they just take a little longer to soak. So keep that in mind depending on what is available to you.    

Soaking Cashews
 Ingredients: 
cashews
Water to cover

Option 1) OVER NIGHT
Place cashews in a glass jar or container and cover with water. Let soak in water for about 10-12 hours. They are fully soaked when they fall apart when you lightly squeeze them.  

Option 2) 3 HOURS
Place cashews in a glass jar or container and cover with hot water. Let soak in water for about 3 hours, making sure to replace with new hot water every 30-45 minutes. They are fully soaked when they fall apart when you lightly squeeze them.

Option 3) 15 MINUTES
Place cashews in a pot with plenty of water to cover 2 inches above cashews. Cover and boil on medium-high to high heat. Boil for 15 minutes, make sure that there is ALWAYS plenty of water in the pot. They are fully soaked when they fall apart when you lightly squeeze them.

I love this light simple key lime pie! It is so creamy and smooth and tastes so fresh, and doesn't make you feel heavy after eating it. You may worry that it will taste like avocados... I can honestly tell you that it does not.  When you put avocados with something, like lime juice, all you can taste is the lime. Moist Grain Free & Paleo Carrot Cake

I have been wanting to make carrot cake for a LONG time. It is one of my favorites! I created this recipe to have a moist and fluffy cake. It turned out so delicious!   I had an idea for creating "cream cheese" frosting with no dairy, I was getting so eager to try it out. I thought that a carrot cake was the perfect cake to go with it.
