Grain Free & Corn free - Paleo "Cornbread" Muffins


When you hear "corn-free Cornbread" it sounds kind of crazy. I knew that it was possible for something to "taste" like cornbread even though it does not have corn in it. Before I realized foods were bothering me, I was trying to find a good vanilla cake recipe. One I tried had a huge cornbread taste. Everyone was like "why did you put cornmeal in this" well I hadn't. For whatever reason, somethings just taste like cornbread even though they don't have anything corn in them. That was my hope when I was trying to create "corn free" cornbread muffins. 
These actually do have a "cornbread" taste. Which is good news for people who like cornbread but can't eat corn.   


We have this meal that is the best with cornbread. It just wouldn't be the same without it. These are a PERFECT replacement for the "real" cornbread. They have a similar texture too! I am sure that you could put these among "real cornbread" and no one would think twice about it.  

Grain & Corn Free - Paleo "Cornbread" muffins 
Makes about 8-10 muffins 
Ingredients
1 1/4 C. Almond flour 
3 Tbsp. Coconut flour
1 tsp. Salt
1/2 tsp. Baking soda 
2 Tbsp. Coconut oil 
2 Tbsp. Honey or maple syrup
1/2 C. Coconut milk (any dairy free milk will work fine)
3 Eggs 
1 1/2 tsp. Apple cider vinegar 

Instructions
Preheat oven to 350'F
Line a muffin tin with 8-10 muffin liners. 

Mix Almond flour, Coconut flour, salt and baking soda in a medium size bowl. Add melted coconut oil and stir. Then mix in the coconut milk, honey or maple syrup, eggs and apple cider vinegar. Scoop about 4 Tbsp of batter into each muffin cup.
Bake for 20-25 minutes or until they are slightly golden brown and are firm to the touch. You can always insert a toothpick in the center, if it comes out clean its done.

How to Soak Cashews 3 different ways!

I have three ways that I have soaked cashews. They all have the same results. When I have the time, or I remember, I use the overnight method. But when you forget...it is nice to have other options! I found that raw or steam pasteurized cashews are the best for soaking. However any type of cashews will work. I have used roasted before, they just take a little longer to soak. So keep that in mind depending on what is available to you.     Soaking Cashews   Ingredients:   cashews Water to cover Option 1) OVER NIGHT Place cashews in a glass jar or container and cover with water. Let soak in water for about 10-12 hours. They are fully soaked when they fall apart when you lightly squeeze them.   Option 2) 3 HOURS Place cashews in a  glass jar or container  and cover with hot water.
