Paleo Banana Muffins



I make these all the time! Every time I do, they fill the room with the smell of fresh baked banana bread!  Who wouldn't make them just for that, I know I would!

 They are so moist and like the best banana muffins you could ever try! 




These are a must have, for me. I absolutely Love Them! 
They were one of the first recipes that I tried with almond flour.

I have made them over and over again, every time they get better and better. 



Paleo Banana Muffins 
Makes 12 muffins 

Ingredients 
2 very ripe bananas, mashed
2 Tbsp. coconut oil 
3 eggs 
1 tsp. apple cider vinegar
1 1/4 C. almond flour  
1/4 C. coconut flour 
1 tsp. baking soda 
1/3 tsp. salt 

Optional ingredients 
1/4 to 1/3 C. chocolate chips
1-2 tsp. cinnamon (I highly recommend this)
1/4 C. cacao nibs
1/4 C. walnuts (or any kind of nut)
1/3 C. coconut
2 Tbsp. of sugar (I don't think it needs any, your choice) 

Instructions 
Preheat oven to 350 degrees F. Line a muffin tin with muffin liners and set aside. 
Add masked banana in a medium size bowl with the coconut oil, eggs and apple cider vinegar and stir till combined. Add remaining ingredients and stir tell well combined. Add any optional ingredients now. Scoop batter into muffin tin filling 2/3 of the way full. Bake in preheated oven for 20-25 minuets, or until tooth pick inserted in the center comes out clean. 
Let cool for 5-10 minuets before taking out the muffins. 





I freeze these all the time, they don't change at all! I just take them out when ever I need them. There a great on-the-go breakfast. 

These are absolutely the best for busy mornings, it can be hard because with a limited diet you can't just run by and pick up a breakfast sandwich whenever you want! I make big batches and put them in freezer bags, then take one out when I need it.

Grain free and Paleo Crepes

Crepes are something that we make for breakfast on every birthday. I couldn't go without crepes, because they are a family tradition.  I created this recipe to be similar to the crepes I used to eat. They taste SO good! They are so easy to make, just blend all the ingredients together and your done!  Grain free and Paleo Crepes   Makes 12-14 crepes Ingredients 6 Eggs  1 C. Dairy Free Milk (I use either coconut or almond)  2 Tablespoons melted Coconut Oil 3 1/2 Tablespoons Coconut  Flour  1/2 + 1 Tablespoon Almond Flour  2 Tablespoons Arrowroot Starch  3/4 teaspoon Salt Instructions Blend all ingredients in a blender until smooth.  Preheat grill, or pan on medium-low heat. Grease your grill or pan with coconut oil.  Pour 1/4 to 1/3 C. of batter on your grill or pan. You will know when they are ready to flip when the top is no longer shiny. Once flipped they don't take very long to cook. I use a pancake spatula to flip these.      Serve

Paleo & Grain Free Sugar cookies

I have always enjoyed making roll-out sugar cookies. I created this recipe for a valentine's day treat. These have such a similar texture and taste, to the ones that I used to make. They have the perfect amount of softness/chewiness for me. I like my cookies to be on the soft side. You can bake them for longer if you like them crunchier.  Paleo & Grain Free Sugar cookies  Makes about 2 dozen  depending on the size of your cookie Cookie Ingredients 1/4 C. Palm Shortening   1/4 C. Maple Syrup  1 Egg 1 1/2 C. Almond Flour  3 Tbsp. Coconut Flour  2 Tbsp. Arrowroot Starch  1/2 tsp. Salt  1/8 tsp. Baking soda (extra 1/8 C. almond flour to roll out dough) Chocolate Frosting ingredients  3/4 C. Coconut Oil  2/3 C. Cocoa Powder 1/2 to 2/3 C. Maple Syrup(adjust to your taste)  1/4 tsp. salt Cookie Instructions    Pre-heat oven to 350' F.
