I Love waffles, especially these banana waffles. They taste so good with the banana in the batter. It gives it the crunchy outside, with the soft inside! I whip the egg whites, this gives them there fluffy texture...so good!
Makes 6-8 waffles
Ingredients
1-1/2 cup Almond Flour
1 Tbsp Coconut Flour
¼ cup arrowroot starch
1 tsp. Baking soda
¼ tsp Salt
2 Eggs, Divided
2 Bananas, Mashed
⅔ C. Canned Coconut Milk
2 tsp. Apple cider vinegar
2 Tbsp Coconut Oil, melted

Instructions
Before you turn on your waffle iron, grease it with coconut oil. Preheat your Waffle iron around medium to medium-high heat.

Separate the egg whites from the yolks. Set the yolks aside and whip the egg whites, set aside.
Mix almond flour, coconut flour, arrowroot starch, baking soda and salt in a medium size bowl.
Add coconut milk, melted coconut oil, egg yolk and apple cider vinegar and stir until combined. Then gently fold in the egg whites.
Fill your waffle iron with the batter.
Every waffle iron is different and needs different amounts of batter. Mine uses about 1/3 of a cup of batter for one waffle. They also need different cooing times.
You know the waffle is done when you can easily open your waffle iron. :)
