Grain Free & Paleo Banana Waffles


I Love waffles, especially these banana waffles. They taste so good with the banana in the batter. It gives it the crunchy outside, with the soft inside! I whip the egg whites, this gives them there fluffy texture...so good! 
  

 Grain Free-Paleo Banana Waffle
Makes 6-8 waffles 

Ingredients
1-1/2 cup Almond Flour
1 Tbsp Coconut Flour
¼ cup arrowroot starch
1 tsp. Baking soda
¼ tsp Salt
2 Eggs, Divided
2 Bananas, Mashed
⅔  C. Canned Coconut Milk
2 tsp. Apple cider vinegar
2 Tbsp Coconut Oil, melted

Instructions
Before you turn on your waffle iron, grease it with coconut oil. Preheat your Waffle iron around medium to medium-high heat.
Separate the egg whites from the yolks. Set the yolks aside and whip the egg whites, set aside.
Mix almond flour, coconut flour, arrowroot starch, baking soda and salt in a medium size bowl.
Add coconut milk, melted coconut oil, egg yolk and apple cider vinegar and stir until combined. Then gently fold in the egg whites.
Fill your waffle iron with the batter.

Every waffle iron is different and needs different amounts of batter. Mine uses about 1/3 of a cup of batter for one waffle. They also need different cooing times.
You know the waffle is done when you can easily open your waffle iron. :)

Grain free and Paleo Crepes

Crepes are something that we make for breakfast on every birthday. I couldn't go without crepes, because they are a family tradition.  I created this recipe to be similar to the crepes I used to eat. They taste SO good! They are so easy to make, just blend all the ingredients together and your done!  Grain free and Paleo Crepes   Makes 12-14 crepes Ingredients 6 Eggs  1 C. Dairy Free Milk (I use either coconut or almond)  2 Tablespoons melted Coconut Oil 3 1/2 Tablespoons Coconut  Flour  1/2 + 1 Tablespoon Almond Flour  2 Tablespoons Arrowroot Starch  3/4 teaspoon Salt Instructions Blend all ingredients in a blender until smooth.  Preheat grill, or pan on medium-low heat. Grease your grill or pan with coconut oil.  Pour 1/4 to 1/3 C. of batter on your grill or pan. You will know when they are ready to flip when the top is no longer shiny. Once flipped they don't take very long to cook. I use a pancake spatula to flip these.      Serve

Paleo & Grain Free Sugar cookies

I have always enjoyed making roll-out sugar cookies. I created this recipe for a valentine's day treat. These have such a similar texture and taste, to the ones that I used to make. They have the perfect amount of softness/chewiness for me. I like my cookies to be on the soft side. You can bake them for longer if you like them crunchier.  Paleo & Grain Free Sugar cookies  Makes about 2 dozen  depending on the size of your cookie Cookie Ingredients 1/4 C. Palm Shortening   1/4 C. Maple Syrup  1 Egg 1 1/2 C. Almond Flour  3 Tbsp. Coconut Flour  2 Tbsp. Arrowroot Starch  1/2 tsp. Salt  1/8 tsp. Baking soda (extra 1/8 C. almond flour to roll out dough) Chocolate Frosting ingredients  3/4 C. Coconut Oil  2/3 C. Cocoa Powder 1/2 to 2/3 C. Maple Syrup(adjust to your taste)  1/4 tsp. salt Cookie Instructions    Pre-heat oven to 350' F.
