Grain Free - Paleo Chocolate Date Balls

  
When I figured out that refined sugar bothered me, I took out alot of sweeteners. Maple syrup, honey, coconut sugar and agave syrup were better but I still got a little sick. Dates were the only thing at first that did not make me sick. I made these all the time! They carried me through that time. Now I can handle maple syrup in small amounts and a little honey and coconut sugar. 

I still make these often, they are so good! I always have a hard time not eating a bunch at a time. 

Grain Free - Paleo Chocolate Date Balls 

Ingredients 
1 lb of non-pitted dates 
1 C of very fine shredded coconut 
little over 1/2 C. walnuts 
1/2 C. Almonds  
2 Tablespoons coconut oil
1/2 tsp salt 
1/3 C. of cocoa 
3 Tbsp chia seeds 
1/4 C. cacao nibs 

Instructions 
Slice dates down the center and remove the pit. 
Add the dates, nuts, and coconut and coconut oil in a food processor and pulse till dates and nuts are broken up in small pieces. 
Add the rest of the ingredients and pulse till all combined.
Roll into tablespoon sized balls, and store in a airtight container or plastic bag. 
I freeze mine and take out a little at a time to thaw.

Grain free and Paleo Crepes

Crepes are something that we make for breakfast on every birthday. I couldn't go without crepes, because they are a family tradition.  I created this recipe to be similar to the crepes I used to eat. They taste SO good! They are so easy to make, just blend all the ingredients together and your done!  Grain free and Paleo Crepes   Makes 12-14 crepes Ingredients 6 Eggs  1 C. Dairy Free Milk (I use either coconut or almond)  2 Tablespoons melted Coconut Oil 3 1/2 Tablespoons Coconut  Flour  1/2 + 1 Tablespoon Almond Flour  2 Tablespoons Arrowroot Starch  3/4 teaspoon Salt Instructions Blend all ingredients in a blender until smooth.  Preheat grill, or pan on medium-low heat. Grease your grill or pan with coconut oil.  Pour 1/4 to 1/3 C. of batter on your grill or pan. You will know when they are ready to flip when the top is no longer shiny. Once flipped they don't take very long to cook. I use a pancake spatula to flip these.      Serve

Paleo & Grain Free Sugar cookies

I have always enjoyed making roll-out sugar cookies. I created this recipe for a valentine's day treat. These have such a similar texture and taste, to the ones that I used to make. They have the perfect amount of softness/chewiness for me. I like my cookies to be on the soft side. You can bake them for longer if you like them crunchier.  Paleo & Grain Free Sugar cookies  Makes about 2 dozen  depending on the size of your cookie Cookie Ingredients 1/4 C. Palm Shortening   1/4 C. Maple Syrup  1 Egg 1 1/2 C. Almond Flour  3 Tbsp. Coconut Flour  2 Tbsp. Arrowroot Starch  1/2 tsp. Salt  1/8 tsp. Baking soda (extra 1/8 C. almond flour to roll out dough) Chocolate Frosting ingredients  3/4 C. Coconut Oil  2/3 C. Cocoa Powder 1/2 to 2/3 C. Maple Syrup(adjust to your taste)  1/4 tsp. salt Cookie Instructions    Pre-heat oven to 350' F.
