Grain free and Paleo Crepes


Crepes are something that we make for breakfast on every birthday. I couldn't go without crepes, because they are a family tradition. 


I created this recipe to be similar to the crepes I used to eat. They taste SO good! They are so easy to make, just blend all the ingredients together and your done! 

Grain free and Paleo Crepes 
Makes 12-14 crepes

Ingredients
6 Eggs 
1 C. Dairy Free Milk (I use either coconut or almond) 
2 Tablespoons melted Coconut Oil
3 1/2 Tablespoons Coconut  Flour 
1/2 + 1 Tablespoon Almond Flour 
2 Tablespoons Arrowroot Starch 
3/4 teaspoon Salt

Instructions
Blend all ingredients in a blender until smooth. 
Preheat grill, or pan on medium-low heat. Grease your grill or pan with coconut oil. 
Pour 1/4 to 1/3 C. of batter on your grill or pan.
You will know when they are ready to flip when the top is no longer shiny. Once flipped they don't take very long to cook. I use a pancake spatula to flip these.     

Serve with your favorite fruits, I like to put blended strawberries along with sliced ones, with sliced bananas and chocolate sauce, recipe below.

Tip: I like to have the grill on a lower temp then you would normally for crepes, because it tends to burn the edges and then the middle is still doughy.

Chocolate Sauce 
3 T. coconut oil 
2 T. cocoa powder
2 tsp. maple syrup
1/4 tsp. salt

Melt coconut oil in a small microwave safe bowl. Stir in the cocoa, then add the other ingredients. 


The Things that you could fill these with are endless. any type of fruit, coconut cream, chocolate sauce, caramel, nuts, jam, blended fruit! The list goes on and on! Have fun creating your favorite ones!

PALEO NANAIMO BARS

My brother makes Nanaimo  Bars often, and they were my favorite. This time when he was going to make them,  I had to find a way that I could enjoy these again, with everyone else!  Side be side you could not tell the difference between mine and his! Dairy Free and Paleo Homemade Chocolate Chips!

Dairy Free and Paleo Homemade Chocolate Chips Ingredients 1/2 C. coconut oil  1/2 c. + 3T. cocoa powder 1/4 tsp salt  1/4 C. maple syrup  Instructions   Melt coconut oil then stir in cocoa and salt. Add maple syrup and stir. Let cool on the counter, until is is no longer warm.  Meanwhile, place a sheet of parchment paper on top of a cookie sheet, (make sure that it fits in your freezer). Pour the chocolate into a plastic bag, and cut a small hole in the tip of the bag.  Pipe little dots in rows across the parchment paper.  Once it is full, place the pan in the freezer for 5 minutes. After that they should be completely set, and should easily  come off the paper.  Transfer to a plastic bag or container and store in the freezer. Repeat with any left over chocolate.
