Grain & Dairy free Peanut Butter Bars


These are dairy, gluten, grain, and refined sugar free! Enjoy! 


These are the real deal! I love chocolate and peanut butter, so these are 
a must have for me!

They are so similar to peanut butter cups you buy at the store!


These are my go-to treats, they are so fast and easy to make. I will just whip a batch up whenever I want a treat! They are a great on the go dessert, just press the layers in a plastic container and stick the lid on, let set in the freezer, and bring where you need to go!   
I like these best at room temperature, they are creamier and richer. But don't leave them out for very long, the coconut oil in the chocolate layer will melt :)

I made these the other day with crunchy peanut butter, they were so good! 

Peanut Butter Bars
Makes 16 squares  
  
Peanut Butter Layer 
Heaping 3/4 C. Natural peanut butter, crunchy or smooth  
1/3 c coconut flour 
3 Tbsp maple syrup, or liquid sweetener of choice
1/2  tsp. salt


Chocolate layer
1/3 c coconut oil melted 
1/3 c.+1 Tbsp cocoa (if you like a lighter chocolate, only add 1/3 C.)
1/3 c. natural peanut butter, crunchy or smooth 
1/4 c. maple syrup 
1/4 tsp. salt

Instructions 

Grease a 8X8 inch square pan with coconut oil and set aside.

Peanut Butter Layer
Mix all the ingredients in a medium bowl for the peanut butter layer, then press into the greased pan. Cover and place in the freezer.

Chocolate layer 
Melt coconut oil in a small microwave safe bowl. Add the remaining ingredients in to the coconut oil. Place back in the microwave if it is too thick, for 10 seconds at a time. This burns easily, be careful! Pour the chocolate layer over the peanut butter layer and spread evenly. Cover and place back in the freezer until the chocolate layer is set to the touch. Cut into 1-2 inch bars and serve!
  


Recipe notes
If it is hard to cut, you can just leave it out in the counter for 5-10 minuets.  
I freeze any left overs, they don't change at all! Enjoy!

Paleo & Grain Free Sugar cookies

I have always enjoyed making roll-out sugar cookies. I created this recipe for a valentine's day treat. These have such a similar texture and taste, to the ones that I used to make. They have the perfect amount of softness/chewiness for me. I like my cookies to be on the soft side. I love this light simple key lime pie! It is so creamy and smooth and tastes so fresh, and doesn't make you feel heavy after eating it. You may worry that it will taste like avocados... I can honestly tell you that it does not.  When you put avocados with something, like lime juice, all you can taste is the lime.
