Dairy Free & Paleo "Cream Cheese" Frosting

I had an idea for creating "cream cheese" frosting with no dairy.
I was getting so eager to try it out. I made it and it turned out amazing! It is so creamy and very similar to the "real" cream cheese frosting I used to make. I used lemon to give it a cream cheese taste, I was worried that it would taste like lemon, but it really didn't. Feel free to adjust the lemon to how "tart" you want it to be.  

Dairy Free & Paleo "Cream Cheese" Frosting 

Ingredients 
1 C. Cashews, soaked*
1/2 C. coconut cream (scraped from an unshaken can of coconut milk refrigerated overnight)
3 Tbsp. creamed coconut, melted**
5 Tbsp. Maple Syrup 
1/2 C. coconut oil, melted
1/4 tsp. salt 
3 Tbsp. Lemon Juice 

Instructions
Blend all ingredients in a high speed blender until creamy and smooth, about 5 minutes. Pour it into a container and cover. Place in the freezer, every 5 minutes take it out and stir it, making sure to scrape the sides. When it has fully thickened and cooled it is ready to use. If you are piping it make sure it is thick enough to stay on the spoon.

Paleo & Grain Free Sugar cookies

I have always enjoyed making roll-out sugar cookies. I created this recipe for a valentine's day treat. These have such a similar texture and taste, to the ones that I used to make. They have the perfect amount of softness/chewiness for me. I like my cookies to be on the soft side. I love this light simple key lime pie! It is so creamy and smooth and tastes so fresh, and doesn't make you feel heavy after eating it. You may worry that it will taste like avocados... I can honestly tell you that it does not.  When you put avocados with something, like lime juice, all you can taste is the lime.
